Super tasty protein bread, packed with gut healthy ingredients!

You will NOT regret making this one! Oats boosts gut health as they are are high in fiber and have prebiotic properties – meaning they act as food for the good bacteria in your gut.

Oats is a superfood when it comes to eating for your gut. High in a unique type of fiber that nourishes and restores healthy gut bacteria

Cottage cheese is high in calcium for your bones and (if it has live cultures, check the label) contains probiotics which is good for your gut

Almonds almonds can improve butyrate synthesis, a short-chain fatty acid that benefits gut health.

INGREDIENTS (makes one bread loaf)

300g cottage cheese
4 eggs
1 tbs runny honey
Small handful of flaked almonds – substitute with sunflower or pumpkin seeds if you’re allergic to almonds, or just skip altogether
120g oats
30g regular flour
2 teaspoon baking powder
Pinch of cinnamon

  • METHOD
  • Place all the ingredients in a bowl
  • Use a stick blender to mix everything together
  • Alternatively, just knead using your hands
  • The dough will be quite runny
  • Use a spatula to scrape the dough into the baking tin
  • Bake for 20-25 minutes, testing for readiness at 20 minutes (poke with a match, if it comes out clean the bread is done)
  • Let the bread rest on the counter for 10 minutes before serving with your favorite topping
