Roasting your tomatoes makes this versatile sauce truly magic

Tomatoes have important anti-inflammatory properties and are therefore great for gut health. The secret to a magic tomato sauce is to spend a few minutes in the morning putting the ingredients in the oven.

Like magic, you will be able to make a fantastic sauce in minutes when you come home in the afternoon.

  • 500 g cherry tomatoes, halved
  • ½ sweet red pepper, coarsely chopped (I just used a leftover from the fridge, you can add more or skip it altogether)
  • 3 cloves garlic, peeled and halved
  • 2-3 small sprigs of fresh rosemary
  • 1 heaped tablespoon brown sugar
  • 5-6 tablespoons olive oil – plain or infused with rosemary (I put the rosemary in the oil a little while before using it and then pour it over the tomatoes)
  • Pinch salt chili and ground pepper
  • Cayenne pepper also tastes great; add a pinch to the tray before putting it in the oven


  • Peel and chop the tomatoes, red pepper and garlic
  • Place in oven proof dish
  • Sprinkle brown sugar, olive oil and spices and toss to blend it in evenly
  • And here is the SECRET TRICK: In a cold oven, place the oven proof dish and set temperature at 200 degrees Celsius
  • When the temperature reaches 200 turn off the oven completely, but DO NOT OPEN the oven door; This part is important, I always put a post-it note on the door as a reminder 🙂
  • Leave the tray in the ove for a few hours – I prepare in the morning and leave it until I come home from work
  • Take it out of the oven, remove rosemary sprigs
  • Pour everything into a blender and give it a good whirl – or put in a bowl and use handheld blender
