Salmon ceviche salad – gut health superfood!
Salmon contains healthy Omega 3 oils and anti-inflammatory properties.
This salmon ceviche is delicious as well and is super easy to make.
Inflammation is linked to several diseases such as Diabetes 2 and heart disease, so eating fatty fish such as salmon is a great part of a gut healthy diet.
130 gram good quality salmon, chopped (I used one Salma burger, hence the grams, doesn’t have to be precise)
Juice from ½ lime + a squeeze of lemon juice if you like
½-1 teaspoon salt
½-1 teaspoon sugar
½ mango, sliced
Ca. 10 cm cucumber, finely chopped
2 tablespoons red onion, finely chopped
Coriander to garnish, chopped
Place diced salmon in a small bowl and squeeze lime (and lemon) juice over. Sprinkle with salt and sugar and place in fridge for 45 minutes or so
Cut the remaining ingredients and place in a serving bowl
Add marinated salmon.
Serve immediately – either eat as is, with rice or in a wrap.
