
Baked sweet potatoes with chili
Healthy comfort food? Yup! Baked sweet potatoes are packed with vitamins, antioxidants, and prebiotic fiber so bake away.
The prebiotic fiber of sweet potatoes are crucial for gut health, as they serve as food for the good bactiera in your gut.
INGREDIENTS – baked sweet potatoes
1 sweet potato, cut in half
Olive oil
Salt, pepper, and chili flakes (skip chili if you want it less spicy)
2-3 tbsp sour cream
Chives to garnish, finely chopped

METHOD
Pre-heat oven to 200C
Cut sweet potato in half lengthwise and use a fork to make holes in the skin side.
Place the sweet potato halves in oven-proof dish or on baking paper on baking tray, skin-side down.
Rub the top (orange side) with olive oil and sprinkle with salt pepper and chili-flakes on top.
Bake for about 1 hour or until soft and serve with sour cream and chopped chives to garnish.
