Gut healthy banana bread recipe
Yes, banana bread is a cake! But this is a gut healthy banana bread recipe, with its added fibre rich oats and prebiotic bananas! Bananas have a soothing effect on the gut and the resistant starch in bananas also has a prebiotic effect, helping to fuel the gut bacteria + oats are rich in fiber and antioxidants.
3 small eggs
2 dl sugar (50/50 white and brown if you can)
2-3 very ripe bananas
175 grams all-purpose flour and oats (mix roughly 50/50)
2 teaspoons baking powder
1 teaspoon vanilla sugar
1 dl dairy or plant-based milk
75 grams butter, melted
Pre-heat oven to 180 degrees Celsius. Line a bread tin with baking paper, or spray with non-stick baking spray.
In a bowl or kitchen aid, beat eggs and sugar until fluffy.
Mix flour and oats together with baking powder and vanilla sugar, add to the bowl together with milk and melted butter.
Mash bananas and add to the batter.
Pour the banana bread mix into the bread tin.
Bake for about 50 minutes but leave for a few extra minutes if not cooked through (stick a wooden skewer or long match in, it should come out clean).
Tastes great right out of the oven with a glass of milk!
