Delicious + Gut Healthy Meat and Vegetable Soup

Our Best Winter Warming Gut Healthy Stew

This hearty meat and vegetable soup is a feast for your gut microbes! It’s packed with gut-healthy prebiotics as well as bone broth.

Ingredients for Meat and Vegetable Soup

7 dl broth or add 4-5 dl if you’re making soup. Try this homemade bone broth if you have time, and make some extra broth for the freezer for busy days! Ready-made is great too but do check that it’s free of artificial additives.

1 onion and 2 garlic cloves, finely chopped.

800 grams vegetable potato mix – frozen vegetables work great. Add green beans for extra nutrition!

400 grams meat and sausage, cut into bite size – choose sausages with high meat content.

A little cooking oil.

This is a perfect dish for using up leftovers – use any meat, vegetables or beans you have really.

Method for Meat and Vegetable Soup

  • In a pot, sauté onions in a little oil until soft
  • Add the vegetables and stock and bring to a boil
  • Add meat and sausages and leave to simmer until vegetables are tender and meat + sausages are done
  • The timing here will vary, depending on meat and sausage
  • I used the meat from the bones of the broth I made, so only needed a few minutes
  • Normally I choose pre-cooked high-quality sausage which also takes a few minutes to warm up, but this time I tried “raw” sausage which needed approx. 25 minutes to cook through

Why try homemade bone broth?

Bone broth is rich in nutrients like collagen, gelatin, and amino acids, supporting joint health, skin elasticity, and gut function.

So I especially love that bone broth, along with vegetables, can help fight inflammation, support skin and gut health as well as bone health!

Why not make a large pot, freeze in portion sizes and use for super-quick and nutritious weekday meals.
